- The staple dish is a porridge of grains and cassava roots.
- The most popular dish is moambé, a spicy stew of
peanuts, palm oil, and chicken served with yams, native
loso rice, or, most commonly, fufu, a paste of mashed manioc
(cassava).
- Diet also consists of sweet potatoes, bananas, plantains,
fruits, and fish, particularly perch.
- Beef is generally only eaten in the higher regions of
the country that are free of the tsetse fly.

had arisen in the Congo - the Kongo kingdom, and the Luba
and Lunda empires.
- The Congo River and its tributaries provide about 8000
miles of waterway transportation for the interior, which
