This homemade lime vinaigrette dressing is made with only a few simple ingredients and can be used to dress green salads, pasta salads, marinate chicken or fish, or add flavor to rice.

Ingredients:

  • 2 tbsp lime juice, fresh or bottled
  • 1 tbsp fresh cilantro, finely chopped
  • 1 tsp garlic, minced
  • 1 tbsp apple cider vinegar, raw with the mother
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • ¼ tsp salt (optional)
  • ¼ tsp sugar (optional)

Instructions:

Combine all ingredients into a medium bowl. Whisk together until well combined.

  • Salad dressing: pour over salad greens such as arugula and toss to combine.
  • Marinade: pour over chicken, fish, or other lean protein in glass or other non-reactive container (avoid aluminum or foil). Cover and store in the refrigerator for at least 1-2 hours.

Notes:

  • Makes 2 servings
  • Store refrigerated in air-tight container
  • Use within 4 days
