After a successful launch on the pediatric inpatient units, the Journals of Hope Program has expanded into the Pediatric Intensive Care Unit, where patients and families can find strength and hope through the power of writing.
These green beans make a great side dish to any meal. This recipe is high in fiber, which helps maintain bowel health, helps control blood sugar and aids in achieving a healthy weight.
- 2 lbs. fresh green beans
- 1 tbsp olive oil
- 4 cloves garlic, chopped fine (or 2 tsp garlic powder)
- ¼ cup grated parmesan cheese
- Salt, to taste
- ½ tsp pepper
- Preheat oven to 400°F. On a baking sheet, place the green beans in a single layer. Drizzle with olive oil and season with salt, pepper, garlic, and parmesan. Toss beans to coat
- Roast in oven for 20-25 minutes, tossing them halfway through or until desired tenderness
- 6 servings
